吉打香汁烤鸡AYAM GOLEK KEDAH

【材料】
全鸡1只(约1.5公斤)

【研磨香料】
食油5-6汤匙、石古仔3粒(浸泡)、小葱头9粒、黑胡椒粒2汤匙、蒜头3瓣、姜2.5公分(去皮)、香茅3枝、小茴香4汤匙

【配料】
马铃薯2粒(去皮切4块)、清水250毫升、 亚三膏1汤匙(+½杯水洗出汁)、浓椰浆250毫升

【调味料】
黄糖2汤匙、盐适量

【做法】
1.把研磨香料以油炒至香后加入马铃薯及鸡只。(图1- 5)
2.加入亚三汁、清水、椰浆及调味料,用小火煮10分钟。(图6-7)
3.将所有材料移入烤盘里,放入预热至180°C的烤炉里烤30-35分钟或至熟。(图 8)
4.从烤炉取出鸡即刻享用。

【INGREDIENTS】

【FINELY GROUND SPICE PASTE】
5-6 tbsps cooking oil, 3 pcs candlenuts(soaked), 9 pcs shallots, 2 tbsps black peppercorn, 3 cloves garlic, 2.5cm ginger(peeled), 3 stalks lemongrass, 4 tbsps cumin

【SUB-INGREDIENTS】
2 large potatoes(peeled & cut into quarters), 250ml water, 1 tbsp tamarind paste + ½ cup water), 250ml thick coconut milk

【SEASONING】
2 tbsps brown sugar, salt to taste

【METHOD】
1.Saute the ground spice paste with oil until fragrant, put in potatoes and the whole chicken. (pic 1-5)
2.Add the tamarind juice, water, coconut milk and seasonings, cook with low heat for 10 minutes (pic 6-7)
3.Transfer everything to a pan and bake the chicken with its gravy for 30-35 minutes @ 180°C or until chicken is cooked. (pic 8)
4.Remove and serve.
