【材料】
越南米纸5张、榴莲雪糕300g(买现成的榴莲雪糕亦可用)

【脆皮榴莲卷做法】
1.将做好的雪糕切成四方条状,再以威化纸包卷好,存冰箱冷冻备用 。(图1)
2.将越南米纸对折,放上一条威化榴莲雪糕条,卷好备用。(图2)
3.把榴莲卷用大火炸至外皮发泡就好,吃起来外酥内冷最为美妙。(图3-4)

【Ingredients】
5 sheet vietnam rice paper, 300g durian ice-cream (also can store bought)

【Method for crispy Durian ice-cream roll】
1.Cut the durian ice-cream into square long sticks, wrap with wafer paper and store in freezer until needed.(pic1)
2.Fold Vietnam paper into half.
3.Place 1 piece of wafer Ice-cream Durian Potong on the vietnam rice paper and roll up. (pic 2)
4.Deep fry durian ice cream rolls in hot oil briskly, dish out and serve immediately.(pic 3-4)

【榴莲雪糕材料】
榴莲果肉500克 蛋黄2个、牛奶120克、幼糖50克(可根据榴莲肉的甜度适当调整)、鲜奶油125ml
用具:900ml的保鲜盒

【榴莲雪糕做法】
1.先将榴莲果肉用叉子压成泥状,放入冰箱冷藏 。
2.锅中倒入蛋黄打散后放入牛奶和糖,用最小火慢慢加热,边加热边不停搅拌,直至蛋奶混合料变稠。
3.熄火,凉却后放入冰箱冷藏。然后加入榴莲泥混合。
4.鲜奶油用打蛋器打发到6、7成,加入蛋奶榴莲混合料,继续搅拌均匀成雪糕。
5.把榴莲雪糕倒入容器中,放入冰箱冷冻一小时。
6.在半凝固状态时取出雪糕,用打蛋器搅拌,重复此过程2至3次,这样雪糕就会没有冰渣,口感香滑。
7.完成搅拌后,再把雪糕倒入保鲜盒中,放入冰箱冷冻。

【Durian Ice- cream Ingredients】
500g durian flesh, 2 egg yolk, 120g milk, 250g castor sugar, 125ml whipped cream, 900ml container

【To prepare durian ice-cream】
1.Mash durian flesh into puree and keep in fridge.
2.Beat egg yolk in pot and then add in milk and sugar, keep stirring and heat in low heat until thicken.
3.Remove from heat, let cool down and then store in fridge.
4.Combine durian puree and egg yolk mixture.
5.Whisk whipped cream until semi fluffy, add in durian mixture and blend until well mix.
6.Pour durian mixture into a container and then frozen in fridge for 1 hour.
7.While the durian ice cream still semi harden form, blend it in blender until fine, pour into container again and frozen for another hour. Repeat this process for 3 times until the texture is smooth.
8.After the blending process, frozen durian ice cream until it is totally set.
