奶皇刺猬包Custard Hedgehog

皮料:
面粉600克、糖 80克、白油40克、发粉1小匙、酵母粉1小匙、水280克

馅料:
鸡蛋200克、牛油80克、糖150克、面粉80克、吉士粉80克、花奶1/2罐

装饰:
黑芝麻少许

做法:
1.馅料:将鸡蛋、糖、牛油、面粉和吉士粉搅拌至滑,加入花奶拌均,用大火蒸30分钟备用。
2.将皮料混合揉均。
3.将面团分成每份40g,杆薄,包入1小匙馅料,收口。
4.用剪刀剪成刺猥形,用黑芝麻做成眼睛,待面团发酵30分钟,最后用大火蒸8分钟至熟即可。

【小贴士】
待发面团的时间要十分准确,不可太久或太快。

600g plain flour, 80g sugar, 40g shortening, 1tsp baking powderm, 1tsp instant yeast, 280g water

Filling:
200g eggs, 80g butter, 150g sugar, 80g plain flour, 80g custard powder, 1/2 can evaporated milk

Garnishing:
some black sesame seeds

Method:
1.For filling: mixes eggs, sugar, butter, plain flour and custard powder until smooth, then toss in evaporated milk, and then steam in high heat for 30 minutes.
2.Knead the pastry ingredients into smooth dough.
3.Apportion the dough 40g each and flatten, then wrap each with 1tsp filling.
4.Use scissor to cut them into hedgehog shape, attached black sesame seed as eyes, then let it rise for 30 minutes, and then steam it in high heat for 8 minutes until cooked.
