苏打饼香脆鸡排Julie’s Crackers Chicken Chop

【材料】
鸡全腿2只(去骨)、A蛋1粒(打散加少许盐及胡椒粉调味)

【奶油苏打饼碎】
Julie’s 奶油苏打饼3小包、干迷迭香1茶匙、

【酱汁材料】
A:牛油2-3汤匙、大葱1粒(剁碎)、柳松菇 1⁄2 包、红灯笼椒 1⁄2粒(切丁)
B:蚝油1汤匙、HP酱2汤匙、白胡椒粉少许、酱青2茶匙、番茄酱3汤匙、辣椒酱2汤匙、盐1茶匙、糖2茶匙、清水250-300毫升薯粉2茶匙(+清水2汤匙勾芡)

【Julie’s沙拉】
A:红萝卜丝50克、紫包菜丝30克、青瓜丝50克、美乃滋3-4汤匙、少许柠檬皮茸、柠檬1粒(挤汁)、少许盐及胡椒粉调味
B:少许Julie’s 奶油苏打饼碎

【鸡肉做法】
1.把将鸡肉用刀背捶打至薄,用鸡蛋、盐及胡椒粉腌好。(图1-2)
2.将Julie’s 奶油苏打饼打碎,加入干迷迭香捞匀备用。(图3-4)
3.鸡肉沾Julie’s奶油苏打饼碎,收入冰箱冷藏30分钟,以避免炸时饼干碎脱落。(图5)
4.热油,放入鸡扒煎至金黄色及熟,捞起滴干油。(图6-7)
5.吃时将煮好酱汁铺在鸡扒上,配搭沙拉一起享用。

【酱料做法】
平底锅内热少许油,爆香大葱至微黄及软,加入其余材料A及B煮至滚,加入少许薯粉水勾芡即可。(图8-9)

【沙拉做法】
将所有材料A一起捞匀,撒上Julie’s奶油苏打饼碎,即可配搭鸡扒一起享用。(图1 0)

【Ingredients】
2 chicken whole leg (deboned), 1 “Grade A” egg (beaten salt & pepper to taste),

【Julie’s cracker crumbs】
3 sachets Julie’s Butter Crackers, 1 tsp dried rosemary

【Sauce】
A:2-3 tbsps butter, 1 big onion(cubed), 1⁄2 packet of fresh shitake mushrooms, 1⁄2 red capsicum(cubed)
B:1 tbsp oyster sauce, 2 tbsps HP sauce, dash of ground white pepper, 2 tsps light soya sauce, 3 tbsps tomato ketchup, 2 tbsps chilly sauce, 1 tsp salt , 2 tsps sugar , 250ml- 300ml water, 2 tsps cornflour + 2 tbsps water for thickening

【Julie’s Salad】
A:50g shreadded carrot, 30g purple cabbage, 50g shreadded cucumber, 3-4 tbsps mayonnaise, grated rind of lemon,1 tsp lemon juice or to taste, salt & pepper to taste
B:1-2 tbsps crushed Julie’s Butter Crackers

【To prepare chicken chop】
1.Pounded chicken to medium thickness, marinate with the beaten egg, salt & pepper.(pic 1-2)
2.Crush Julie’s Butter Crackers using a rolling pin till coarsely crushed. Add dried rosemary to the crumbs & set aside.(pic3-4)
3.Dunk the marinated chicken chop into the Julie’s Butter Crackers crumbs and refrigerate for 30 minutes. This helps the crumbs stick onto the chicken chop.(pic 5)
4.Heat sufficient oil in a pan; deep fry the coated chicken chop turning over once in medium heat.(pic 6-7)
5.Serve chicken chop with sauce over the chop; salad on the side.

【To prepare the sauce 】
Heat butter, saute the onions until caramelized and soft, then add remaining ingredients A & B, bring to a boil, add thickening and dish out. (pic 8-9)

【To prepare salad 】
Combine all ingredients A. Mix in the crushed Julie’s Butter Crackers, serve immediately with the chicken chop.(pic 10)
