肉丸通心粉Meatballs with spaghetti

【肉丸材料】
大葱2粒(剁碎)、蒜头2瓣(剁碎)、烟肉50克(剁碎)、迷迭香茸2茶匙,洋莞荽茸1⁄4杯、牛肉碎300克、鸡肉/猪肉碎300克、辣椒粉1⁄2茶匙、鸡蛋1粒、面包糠30克、parmesan芝士30克、盐适量

【酱汁】
橄榄油3-4汤匙、月桂叶2片、小葱头1粒、蒜头2瓣、西芹1枝、红萝卜1条(全剁碎)、番茄450克(剁碎)、番茄膏3汤匙、红酒1杯、清水2杯、黄糖2汤匙、干马郁兰2茶匙、盐和黑胡椒粉适量
通心粉300克(根据包装指示煮好)
额外parmesan芝士和洋莞荽茸

【做法】
1.把所有肉丸材料混合,以手搅拌后搓成直径2公分丸子,收入冰箱30分钟。(图1-3)
2.以中火热油,把肉丸分批煎4-5分钟至金黄色。(图4)

【酱汁做法】
1.在深锅热油,加入大葱,月桂叶及蒜头,炒至软身,加入西芹、红罗卜、番茄及调味料。(图5-6)
2.加入番茄膏,清水和酒,小火焖煮20分钟至稠,再加入黄糖,干马郁兰,黑胡椒粉及盐调味。(图7)

【吃法】
1.把肉丸和酱汁混合煮滚后淋在通心粉上。
2.撒入额外的parmesan芝士和洋莞荽茸即可。

【Ingredients For meatball】
2 big onions(chopped), 2 garlic cloves(chopped), 50g bacon (chopped finely), 2 tsp chopped rosemary, 1⁄4 cup chopped parsley, 300g minced beef, 300g minced chicken/pork , 1⁄2 tsp dried chilli flakes, 1 large egg, 30 g breadcumbs, 30g parmesan cheese, salt to taste

【Sauce ingredients】
3-4 Tbsps extra-virgin olive oil, 2 dried bay leaves, 1 small onion(chopped), 2 cloves garlic(chopped), 1 stalk celery(chopped), 1 carrot(chopped), 450 g fresh tomatoes(chopped coarsely), 3 heaped tbsps tomato paste, 1 cup red wine, 2 cups water / stock, 2 tbsps brown sugar, 2 tsps dried oregano, salt , coarsely ground black pepper to taste
300g spaghetti(boiled to packet instructions), extra parmesan cheese to top over, some chopped parsley for topping

【To prepare meat balls】
1.Place all meat ball ingredients in a bowl, mix well with your hands. Roll into 2cm balls and chill for 30 minutes.(Pic 1-3)
2.Heat oil in a pan over medium-high heat. In batches, cook meatballs for 4-5 minutes until well browned. Set aside.(pic 4)

【To prepare sauce】
1.In a large casserole pot/wok, heat oil over medium high heat. Add onion, bay leaf and garlic, saute until soft and translucent. Add celery, carrots, tomates and seasoning.(pic 5-6)
2.Add tomato paste, water / stock and wine, simmer uncovered on low heat for 20 minutes or until thick. Season with brown sugar, oregano, black pepper and salt to taste.(pic 7)

【To serve】
1.Place some of the meatballs in a pan with some sauce, bring to a quick boil and pour over cooked spaghetti.
2.Serve with a dash of extra parmesan cheese over and chopped parsley.
