咖啡提拉米苏月饼Mocha Tiramisu Mooncake

【材料】
A:糖青150克(现买)、牛油100克、枧水1⁄2茶匙
B:低筋面粉280克、咖啡香精1茶匙
C:(涂面料): 蛋黄1粒、水1汤匙、盐1⁄4茶匙
D:干面粉适量

【馅料】
友爱Tiramisu莲蓉850克、友爱芒果莲蓉850克、杏仁100克(烘香)

【做法】
1.把A料放入搅拌器打均,加入B料拌打均匀成一软团,取出休息1⁄2小时,分割成每份30克重。(图1-2)
2.把Tiramisu莲蓉馅加入杏仁拌匀再分割成每粒60克重。(图3)
3.把芒果莲蓉馅加入杏仁拌匀后分割成每粒60克重。(图4-5)
4.取一份Tiramisu莲蓉馅包入一份芒果莲蓉馅,外层再裹上咖啡皮料,搓圆,沾上少许干面粉,放入模型压紧轻轻敲击。(图7-10)
5.放入预热烤箱以180℃烘约15分钟,取出待冷些搽上蛋液再烤约10分钟便可。

【Ingredients】
A:150g gold sugar syrup, 100g butter, 1⁄2 tsp alkaline water
B:280g Super fine flour, 1 tsp instant coffee powder
C:1 egg yolk, 1 tbsp water, 1⁄4 tsp salt
D:Some flour for dusting

【Filling Ingredients】
850g YOU AI tiramisu flavour lotus paste, 850g You AI mango flavour lotus paste, 100g almond nibs (toasted)

【Method】
1.Combine ingredients A in blender, add in ingredients B and blend into soft dough, let rest for 1⁄2 hour and then apportion to 30g each.(pic 1-2)
2.Mix half almond nibs with tiramisu lotus paste and then apportion into 60g each.(pic 3)
3.Mix remaining almonds nibs with mango lotus paste then divide into 60g each.(pic 4-5)
4.Wrap a portion of mango lotus paste with tiramisu lotus paste, outer layer wrap with mocha dough, sprinkle some flour over and press into mould, dislodge by knocking the mould.(pic 7-10)
5.Bake in pre-heated oven at 180℃ for 15 minutes, remove from oven, apply egg sauce on top and then bake again for another 10 minutes, done.
