桑叶粿Mulberry leaf Kuih

【皮料】
鲜桑叶20克+清水50克、糯米粉200克、粘米粉50克、盐1⁄2小匙、滚水130克、油1 1⁄2汤匙、香蕉叶适量

【馅料】
眉豆200克、香菇3朵

【调味料】
五香粉1⁄4小匙 、盐1⁄2小匙、胡椒粉1⁄8小匙、油2汤匙

【馅料做法】
1.把眉豆洗干净,用清水浸泡隔夜,然后煮至软,再沥干水份后压烂。(图1-2)
2.将香菇浸软,切小粒。烧热油后加入香菇炒香,再加入眉豆和调味料炒均匀,即成馅料,待凉用。(图3)

【做法】
1.先把鲜桑叶加入清水用果汁机打碎,待用。(图4)
2.将2种粉拌匀冲入滚水拌均匀,加入盐和桑叶水、油一起揉拌均匀 。( 图5-6)
3.分成小团粒,包入馅料摺成三角形,排在已涂油的香蕉叶上。(图 7)
4.放入蒸笼,蒸8-10分钟即可。(图8)

【Skin ingredients】
20g mulberry leaf (Sang Ye)+50g water, 200g glutinous rice flour, 50g rice flour, 1⁄2 tsp salt, 130g boiling water, 1 1⁄2 tbsp oil, some banana leaf

【Filling】
200g black eye beans, 3 pcs dried mushroom

【Seasoning】
1⁄4 tsp 5 spiced powder, 1⁄2 tsp salt, 1⁄8 tsp pepper, 2 tbsp oil

【Method for filling】
1.Wash the beans and soak overnight; and then boil until soften, drained and mashed.(pic 1-2)
2.Soaked dried mushroom and diced; sauté with hot oil until fragrant, add in mashed beans and season to taste. Set aside.(pic 3)

【Method】
1.Blend mulberry leaf with water and set aside.(pic 4)
2.Mixes two flours and then mix in boiling water, follow with salt and mulberry leaf juice and oil, knead into soft dough.(pic 5-6)
3.Apportion dough into small pieces, wrap in each with adequate filling and make into triangle shape, place on top of greased banana leaf.(pic 7)
4.Steam in steamer for 8-10 minutes, done. (pic 8)
