炖豆煎三文鱼Pan Fried Salmon Loin with Duo Beans Stew

【材料】4人份
三文鱼4块(每块120克)、盐和胡椒粉适量

【扁桃杂蔬料】
菜胆、红萝卜、芥兰花及樱桃番茄适量、扁桃仁片45克、牛油60克、蒜头2瓣(剁碎)、盐和胡椒粉适量

【炖豆材料】
眉豆90克(浸泡隔夜)、毛豆40克、大葱80克(切丁)、蒜头3瓣(剁碎)、百里香1束(剁碎)、鸡高汤300毫升、烹调奶油50毫升、牛油60克、盐和胡椒粉适量

【炖豆做法】
1.用牛油把大葱、百里香及蒜头爆香,然后加入眉豆和毛豆。(图1-2)
2.倒入高汤煮至滚,然后转小火把豆类焖至软身,必要时 可多加高汤 。(图3)
3.加入烹调奶油和调味料即可,保温。

【扁桃杂疏做法】
1.把所有蔬菜类切小,放入加盐滚水川烫后滴干。
2.用牛油把扁桃仁片炒至赤黄后加入蒜头爆香。(图4)
3.加入疏菜炒匀,以盐和胡椒粉调味。(图5-6)

【吃法】
1.以盐和胡椒粉腌三文鱼。
2.在平底锅热牛油和油,把三文鱼两边煎熟。(图 7 – 8)
3.把炖豆铺碟,放上煎三文鱼,周围以扁桃杂疏围碟即可上桌。

【Ingredients】4 pax
4pcs salmon loin 120gm per portion, salt and pepper to taste

【Vegetables almondine 】
brussel sprout, carrot, broccoli, cherry tomato, 45g almond flakes, 60g butter, 2 cloves garlic(chopped), salt and pepper to taste

【Bean stew】
90g black eye beans(soak over-night), 40g edamame bean, 80g onions(diced), 3 cloves garlic(chopped), 1 sprig thyme (chopped), 300ml chicken stock, 50ml culinary cream, 60g butter, salt and pepper to taste

【To prepare bean stew】
1.Sauté onion, thyme, garlic with butter; add in black eye bean, edamame bean.(pic 1-2)
2.Stir in chicken stock, bring to boil and simmer till beans soften. *add extra stock if required.(pic 3)
3.Add in cream and adjust seasoning . Keep warm.

【To prepare vegetable almondine】
1.Cut and blanch vegetables in salted water. Drain.
2.Brown almond flakes with butter in a hot pan, add in garlic. (pic 4)
3.Stir in blanched vegetables, season to taste with salt and pepper.(pic 5-6)

【To prepare bean stew】
1.Season salmon loin with salt and pepper.
2.Heat butter and oil in a grill pan, brown the salmon on all side.(pic 7-8)
3.Served hot on a bed of bean stew and sautéed vegetable almondine.
