【材料】
紫菜4张、咸菜50克、菜脯碎50克、马铃薯50克(煮熟切丁)、豆腐1块、红萝卜茸3汤匙

【调味料】
盐1茶匙、酱油1茶匙、糖1茶匙

【做法】
1.将咸菜洗净后用沸水汆烫以去除咸味,再放入冷水中浸透,捞起挤干水份,剁碎备用。
2.将菜脯泡软,捞起沥干水份备用;豆腐洗净沥干水后切成丁。
3.在锅中烧热少许油,把咸菜,豆腐丁和菜脯茸陆续倒入锅内以慢火炒干水份及炒香为止。(图1)
4.加入调味料和薯泥拌匀,捞起摊凉即成馅料。
5.取一张紫菜摊平,包上适量的馅料卷紧包扎好。(图2-3)
6.将卷好的紫菜分切成平均小段,铺上萝卜茸,用旺火蒸约12分钟,即可食用。(图4-6)

【Ingredients】
4 sheet seaweed, 50g salted mustard, 50g chopped pickled radish, 50g potato (cooked & diced), 1 block tofu, 3 tbsp chopped carrot

【Seasoning】
1 tsp salt, 1 tsp soy sauce, 1 tsp sugar

【Method】
1.Wash salted mustard, blanch in boiling water; and then soak in cold water, drain and chop.
2.Soak pickled radish and drain; wash tofu and diced.
3.Heat some oil in wok, add in salted mustard, tofu and pickled radish and stir fry in low heat until water dries up and aromatic.(pic 1)
4.Add seasoning and then pour in diced potato, mix well as filling.
5.Place some filling on a piece of seaweed, wrap and roll into sushi shape.
6.Cut seaweed roll into blocks, top with chopped carrot and steam for 12 minutes, done. (pic 4-6)
