芙蓉烧蟹SEREMBAN BAKED CRAB

【材料】
大肉蟹2只、粟粉2汤匙

【调味料】
生抽3½汤匙、糖4汤匙、蜜糖2汤匙(最后下)、水1大碗

【做法】
1.蟹洗净,斩成两块,撒上粟粉,放入热油中炸至熟,捞出沥油,备用。(图1-3)
2.把炸油盛起,放入糖炒成金黄色糖浆。(图4)
3.加入生抽炒香后,倒入水煮滚。(图5)
4.放入炸过的蟹,大火煮至稍干,加入蜜糖翻炒至收干便可。(图6-8)

【INGREDIENT】
2 big crabs, 2 tbsp corn flour

【SEASONING】
3½ tbsp soy sauce, 4 tbsp sugar, 2 tbsp honey (add last), 1 bowl water

【METHOD】
1.Clean and wash crabs; cut into hlave and coat with corn flour, deep fry in hot oil until cooked, dish out and drain. (pic 1-3)
2.Discard oil from wok, add in sugar and stir-fry until caramelized. (pic 4)
3.Add in soy sauce and suate until fragrant; pour in water and bring to boil. (pic 5)
4.Add in fried crabs and stir-fry in high heat until gravy reduced; toss in honey and continue stirfrying until gravy dried up, done. (pic 6-8)
