鱼香茄丁Stir-fried Eggplant with Minced Meat

【材料】
茄子150克(切丁)、猪肉60克(切碎)、长豆50克(切丁)、菜脯40克(切丁)、红辣椒1条(切丁)、丹佬咸鱼20克(切丁)

【调味料】
鸡精粉1/2茶匙、豆瓣酱1茶匙、蚝油1茶匙、麻油1茶匙、糖少许

【做法】
1.茄子、长豆丁各别放入热油中泡油,取出沥干油。
2.锅中留油少许爆香咸鱼,铲起沥油。
3.下猪肉碎炒散至转白色,加入调味料。
4.最后把全部材料加入快手翻炒约1分钟,即可上菜。

【Ingredients】
60g minced meat, 150g egg plant, 50g long bean, 40g pickled radish, 1 red chilli, 20g salted Garoupa fish(diced all)

【Seasoning】
1/2 tsp chicken stock granule, 1 tsp soy bean paste, 1 tsp oyster sauce, 1 tsp sesame oil, dash of sugar

【Method】
1.Blanch eggplant and long bean in hot oil and drain.
2.Keep some oil in wok, saute salted fish until fragrant, drain.
3.Add in minced meat, stir-fry until loosen and turned white, add seasoning.
4.Toss in all ingredients and stir-fry for about 1 minute, dish out.
