甜辣黑胡椒排骨Sweet And Spicy Black Pepper Spareribs

材料:
小排骨450克、食油1汤匙

调味料:
盐1/4茶匙、白糖1/4茶匙、花雕酒1汤匙、生粉2汤匙、鸡蛋液1汤匙、清水2汤匙

酱汁:
黑胡椒酱3汤匙(甜辣味)、黑醋1汤匙、姜汁1汤匙、盐3/4茶匙或适量、麻油1汤匙、清水200毫升

做法:
1.排骨洗净后砍成4公分长条,然后以调味料腌数小时。
2.把腌过的排骨放入热油中炸至金黄色后盛起。
3.锅中烧热1汤匙食油,放入酱汁材料煮至滚,加入排骨,转小火煮至汁稠。即可盛出,间中搅拌以确保所有排骨沾到汁。

Ingredients:
450 spareribs, 1tbsp oil

Seasoning:
1/4tsp salt, 1/4tsp sugar, 1tbsp Hua Tiau wine, 2tbsp cornflour, 1tbsp beaten egg, 1-2tbsp water

Sauce:
3tbsp black pepper sauce(sweet&spicy), 1tbsp Worcestershire sauce, 1tbsp fresh ginger juice, 1tbsp tomato sauce, 3/4tsp salt or to taste, 1tbsp sesame oil, 200ml water

Method:
1.Rinse spareribs well and chop into 4cm lengths. Marinate with seasoning for several hours.
2.Deep-fry marinated spareribs in hot oil until golden brown and meat is cooked through. Dish out.
3.Heat wok with 1tbsp oil and pour in sauce ingredients. Bring to a boil. Add pre-fried spareribs. Reduce heat and simmer until the gravy is thick. Stir occasionally until the ribs are well coated with the sauce. Dish out and serve.
