腌芒果酱烤鸡翼Tangy Chicken Wings with Mango Chutney

腌芒果酱

材料A:
食油2汤匙

材料B:
大葱1粒(切片)、青辣椒2条(剖半)、咖哩叶2束

材料C:
生芒果2粒(约450克果内,切5公分长片)、番茄1粒(切片)、小茴香粉1茶匙、辣椒粉1茶匙、黄姜粉1茶匙、白糖50克、清水1杯、盐1茶匙

香料:
桂皮5公分长、丁香5粒、柚籽5粒、茴香1茶匙(捣烂)

芒果酱做法:
1.起锅热油,以中火把香料炒1-2分钟至香。
2.加入材料B,,继续炒2分钟。当大葱软身时,加入材料C。
3.盛出装罐,当沾酱用。

材料:
鸡翼10只

腌料:
蒜头2瓣(剁碎)、姜2.5公分(剁碎)、鸡精粉1茶匙、腌芒果酱3汤匙、蜜糖2-3汤匙、黑胡椒1/4茶匙、盐1/4茶匙

做法:
1.用腌料腌鸡翼,收在冰箱3小时或更长时间。(图1-3)
2.预热烤炉至190℃放入鸡翼烤15-20分钟,间中翻转一次。趁热吃。

MANGO CHUTNEY

INGREDIENTS A:
2 tbsps cooking oil

INGREDIENTS B:
1 big onion (sliced), 2 green chilles (halved), 2 sprigs curry leaves

INGREDIENTS C:
2 unripe mangoes (450g nett mango fresh, pitted & sliced 5cm rectangles), 1 tomato (sliced), 1 tsp cumin powder, 1 tsp chilly powder, 1 tsp turmeric powder, 50g sugar, 1 cup water, 1 tsp salt

SPICE A:
1 cinnamon stick (5cm), 5 cloves, 5 cardamon pods, 1 tsp fennel seeds (coarsely pounded)

METHOD:
1.Heat oil over medium heat in a wok, stir-fry Spice A until fragrant approximately 1-2 minutes.
2.Add ingredients B & continue to stir-fry for 2 minutes.
3.When onions are soft & light brown, add all ingredients C.
4.Remove from heat & transfer into a glass jar to be served as a dip.

INGREDIENTS:
10 chicken wings

MARINATE INGREDIENTS:
2 cloves garlic (finely ground), 2.5cm ginger (finely ground), 1 tsp chicken stock granules, 3 tbsps mango chutney, 2-3 tbsps honey or to taste, 1/4 tsp ground black pepper, 1/4 tsp salt

METHOD:
1.Marinate chicken wings with marinade ingredients for 3 hours or more in the refrigerator. (pic 1-3)
2.Heat oven to 190℃ & grill wings for 15-20 minutes turning over once. Serve warm.
