【芋泥馅材料】
A:蒸熟芋头泥700克、煮熟莲子泥300克、糖400克、葵花油200克
B:瓜子仁50克(烘香)

【芋泥馅做法】
把全部A料用小火不停搅拌至离锅称为芋蓉馅,待冷后加入瓜子仁,分成100克一份,搓圆备用。(图1-2)

【冰皮材料】
糕粉120克(过筛)、糖粉100克(过筛)、冷水130克、白油2汤匙、芋头100克

【皮料做法】
1.把芋头蒸熟,趁热压烂,加入糕粉、糖粉拌匀,加入冷水拌成软团,再加入白油搓揉至光滑,分成50克等份。(图3-4)
2.用一份皮料包入馅,放入撒粉的模型中压平,敲出饼型,放入雪柜冷冻后吃。(图5-8)

【小贴士】
可买现成芋泥。

【Filling Ingredients】
A: 700g steamed yam(mashed), 300g cooked lotus seeds(finely blended)
B:50g water melon seeds(toasted), 400g sugar, 200g sun flower oil

【Yam Paste】
Cook all ingredients A, using low heat, keep stiring until yam paste doesn’t stick to the wok, let cool down then mix in water melon seeds and apportion into 100g each.(pic 1-2)

【Crystal Skin】
120g cooked glutinous rice flour “koh fun”, 150g icing sugar(both sifted), 2 tbsp shortening, 130ml water, 100g1. yam

【Method】
1.Steam yam pieces and mash while hot, mixes in Koh Fun and icing sugar, then add in water and shortening, knead into smooth dough, divide into 50g each.(pic 3-4)
2.Use 1 portion of skin wrap in 1 portion of filing, shape into ball and place onto koh fun coated moon cake mould, press light but firmly, and then dislodge and store in fridge.(pic 5-8)

【Tips】
Yam paste can be store bought.
