芋头排骨汤Yam & Pork Ribs Soup

【材料】
排骨700克(砍2公分长块,清水2公升,食油2汤匙,蒜头2瓣(剁碎),虾米25 克(洗净剁碎),芋头850克(切块),盐和胡椒粉适量

【做法】
1.将虾米洗净剁碎;芋头去皮切块。
2.取一锅煲把水煮滚。
3.取2勺滚水把排骨川烫,沥干,然后把排骨放入煲里,慢火焖煮。
4.起锅热油,把蒜头爆香。加入虾米。继续炒至香。加入芋头,炒一会后盛出。
5.排骨煮至软身后,加入芋头和蒜头虾米。慢火煮至芋头熟透后,以盐和胡椒粉调味即可。

【Ingredients】
700 g pork ribs (cut into 2cm lengths), 2 litres water, 2 Tbsps cooking oil, 2 cloves garlic (chopped), 25 g dried prawns , 850g yam, salt & pepper to taste

【Method
1.Wash and chopped dried prawns; cut yam into wedges.
2.Bring water to a rolling boil in a pot.
3.Scald the pork ribs with 2 ladleful of the hot boiling water. Drain and add the pork ribs into the remaining boiling water. Lower the heat and let the stock simmer.
4.Heat oil in a wok, sauté chopped garlic until fragrant.Add the dried prawns & continue sautéing till the dried prawns are fragrant.Toss in the yam wedges & sauté for awhile, remove from heat.
5.Once the pork ribs are tender, add the sautéed yam wedges and the dried prawns.Simmer over low heat until yam is tender, adjust salt & pepper to taste.
