潮式蒸鱼头Teochew Style Steamed Fish Head

【材料】
鱼头1/2只、汕头咸菜2片、番茄1粒(切片)、香菇3朵(浸软切丝)、豆腐1砖、红辣椒1条(切丝)、青葱1棵(切段)、芫茜少许

【调味料】
潮州黄豆酱1汤匙、糖1茶匙、味精1茶匙、水1/2碗、水梅2粒(去籽压烂)

【做法】
1.豆腐切片排入盘中垫底,鱼头洗净开边,放入豆腐面上。
2.把其余材料置放在鱼头上,并淋入调味料。
3.待镬中的水煮沸后,把鱼移入以大火蒸12分钟至鱼头熟,取出撒入芫茜、葱、辣椒丝便可。

【Ingredients】
1/2 fish head, 2 sprigs salted mustard, 1 tomato (sliced), 3 pcs mushroom (soaked and shredded), 1 block tofu, 1 red chili (juliennes), 1 stalk spring onion (cut into blocks), some coriander

【Seasoning】
1 tbsp Teochew Soybean Paste, 1 tsp sugar, 1 tsp MSG, 1/2 bowl water, 2pcs sour plum(remove seeds and crushed)

【Method】
1.Slice tofu and arrange in plate, top with fish head.
2.Place all other ingredients on top of fish head and then pour in seasoning.
3.Steam fish at water boiling point and steam for 12 minutes or until cooked, sprinkle juliennes coriander, spring onion and red chili on top to serve.
