芝士蔬菜派Vegetable Pot Pie

【馅料】
牛油2汤匙、蒜头2瓣(剁碎)、马铃薯180克、红萝卜2条(均滚刀切)、中筋面粉2 1/2汤匙,芥兰花180克(切小朵)、西芹2枝(切片)、鲜菇1包(去梗)、牛奶375毫升、蔬菜汤250-375毫升+鸡粉1茶匙、鲜百里香茸11/2汤匙、小葱头8粒(去衣保留整粒),盐1/4茶匙、现磨黑胡椒1/2茶匙

【饼皮材料】
A:普通面粉250克、发粉1 1/2茶匙、苏打粉3/4茶匙、盐1/8茶匙、现磨黑胡椒1 茶匙、 混合香草1茶匙
B:无盐牛油4 1/2汤匙(切粒)、cheddar芝士茸75克、低脂牛奶1杯额外cheddar芝士茸、牛油及面粉

【饼皮做法】
1.把皮料A混合均匀后加入牛油,搅拌至粗略融合后加入芝士及牛奶,搅拌至潮湿即可。(图1)
2.桌面撒上额外面粉,把面皮杆成2公分厚,用模型切成圆形。(图2)

【馅料做法】
1.以中高火热一大不粘锅,加入牛油,涂满锅后加入蒜头,炒香后加入马铃薯煮5分钟,然后加入红萝卜,鲜菇,炒一会后加入面粉,煮1分钟。不停搅拌,慢慢加入牛奶和高汤,以手打搅拌器搅拌均匀,然后加入西芹,鲜百里香茸,芥兰花及小葱头,搅拌均匀后移入烤盘里。(图3-5)
2.撒上额外芝士茸,再盖上面皮。(图6-7)
3.用牛油涂面皮表面,然后放入预热至180℃的烤炉里烤35-40分钟至皮酥。(图8)

【Filling Ingredients】
2 heaped tbsp butter, 2 cloves garlic(chopped), 180 g baking potato (cut wedges) , 2 carrots(cut wedges), 2 1/2 tbsp all-purpose flour, 180g broccoli(cut into florets), 2 stalks celery(sliced into 2cm slices), 1 packet fresh shitake mushrooms(stems removed), 375ml milk, 250-375ml vegetable broth + 1 tsp stock granules,1 1/2 tbsp chopped fresh thyme, 8 pcs shallots(peeled and left whole ),1/4 tsp salt, 1/2 tsp freshly ground black pepper

【Biscuit pastry】
A:250 g plain flour, 1 1/2 tsp baking powder , 3/4 tsp baking soda, 1/8 tsp salt, 1 tsp freshly ground black pepper ,1 tsp mixed herbs [optional] B: 41/2 tbsp un-salted butter(cut into pieces), 75g grated cheddar,1 cup low-fat milk 100g extra cheddar for topping over vegetables [optional], extra butter for greasing tray and dollop over biscuits, extra flour for dusting

【To make biscuit pastry】
1.Combine Biscuit pastry A in a large bowl, stirring with a whisk. Add in butter and blend until mixture resembles coarse meal. Stir in cheese, add milk, stirring just until moist.(pic 1)
2.Lightly dust the work top with some extra flour, roll out the biscuit pastry to approximately 2cm thick, trim into scone shape with cutter.(pic 2)

【To prepare filling】
1.Heat a large nonstick pan over medium-high heat. Add butter to pan; swirl to coat. Add garlic and sauté, adding potato and sauté 5 minutes. Add carrots, mushrooms and sauté for awhile before adding the flour. Cook 1 minute, whisking constantly. Gradually add milk and broth, stirring with a whisk. Stir in celery, thyme, broccoli and shallots. Transfer to a baking dish.(pic 3-5)
2.Top with some cheese before cover with the biscuit pastry.(pic 6-7)
3.Dollop butter over and bake in preheated oven @ 180℃ for 35-40 minutes or until biscuits are crispy.(pic 8)
