蔬菜炒饭Vegetables Fried Rice

【材料】
食油5-6汤匙、鸡肉100克(切丁)、白饭 2 杯(弄松)、蒜头2瓣(剁碎)、小葱头2粒(剁碎)、咖喱叶1束、姜茸1茶匙、辣椒泥2汤匙、芫荽1束(剁碎)

【蔬菜材料】
芥兰花80克(切小朵)、包菜花80克(切小朵)、红萝卜60克(切丁)、长豆50克(切粒)

【调味料】
盐1茶匙、胡椒粉1/4茶匙

【做法】
1.起锅烧热油,把全部蔬菜料放入油中过油片刻,捞出沥干油备用。(图1)
2.用锅中余油,把蒜茸和葱头茸爆香。(图2)
3.加入咖喱叶和辣椒泥,继续炒至香。(图3-4)
4.加入姜茸,再炒20秒钟后才加入白饭炒匀。(图5)
5.加入鸡肉和白饭,最后下调味料炒均,试味。(图6-8)
6.吃时撒入芫荽茸。

【Ingredients】
5-6 Tbsps cooking oil, 2 cloves garlic (chopped), 2 shallots (chopped), 1 sprig curry leaves, 1 tsp ginger paste, 2 Tbsp chilly boh, 100g chicken meat (cubed), 2 cups cooked rice (fluffed up), 1 sprig coriander leaves(chopped)

【Mixed Vegetables】
80g broccoli (cut into small florets), 80g cauliflower(cut into small florets), 60g carrots (cubed), 50g long beans (diced)

【Seasonings】
1 tsp salt or to taste, 1/4 tsp ground pepper

【Method】
1.Heat oil in a wok, blance all mixed vegetables in oil briefly, dish out and drain.(pic 1)
2.Using the same oil, sauté chopped garlic & shallots until light browned. (pic 2)
3.Add the curry leaves and chilly boh, continue sautéing till fragrant. (pic 3-4)
4.Add the ginger paste and sauté further for 20 seconds before adding the rice. (pic 5)
5.Add vegetables and chicken, stir fry well, add seasoning ingredients and adjust to taste. (pic 6-8)
6.Remove from heat, garnish with chopped coriander leaves.
