金丝花饨 Golden Fried Wanton Cups

材料
云饨皮8 片、鸡腿肉100克(去骨、剁碎)、
蒜末1茶匙、小红葱1½茶匙(剁碎)、
甜玉米2汤匙、红苹果⅓颗 (切丁)、
红大葱¼颗(切丁)、灯笼椒⅓颗 (切丁)、
Bunga Raya Ku’s (Kampungku) Chicken &
Meat Curry Powder 1茶匙、
Bunga Raya Ku’s(Suriku) Chilli Powder ½茶匙、
Bunga Raya Ku’s (Tropiku)Rendang Coconut
Paste 2汤匙、香菜适量(点缀)
调味料
酱油1½茶匙、糖少许、盐少许
做法
1.镬内热油,爆香小葱头茸及蒜茸,加入鸡肉碎炒匀。
2.加入Bunga Raya Ku’s (Suriku) 辣椒粉及Bunga Raya Ku’s (Kampungku) 鸡肉及肉类咖哩粉炒匀。
3.加入大葱及调味料调味,拌炒均匀成馅料。
4.云饨花杯做法:在12连圆形蛋糕烤盘上刷油,放上云饨皮,呈现出花的形状。
5.将烤盘放入预热至130℃的烤箱内,上下火烤9分钟至金黄色即可,取出放一旁备用。
6.把肉碎放入已烤好的云饨皮里,加入苹果块、甜玉米、红灯笼椒块及香菜点缀就能上桌。
Ingredients
8 wanton wrappers, 100 chicken leg (boneless, chopped),
1 tsp chopped garlic, 1½ tsp chopped shallot,
2 tbsp corn kernel, ⅓ red apple, ¼ big red onion,
⅓ red capsicum (cut small),1 tsp Bunga Raya Ku’s (Kampungku) Chicken & Meat Curry Powder,
½ tsp Bunga Raya Ku’s (Suriku) Chilli Powder,
2 tbsp Bunga Raya Ku’s (Tropiku) Rendang Coconut Paste, some coriander leave (for garnishing)
Seasoning
1½ tsp soy sauce, sugar and salt to taste
Method
1. Heat oil in wok, sauté chopped shallot and garlic till fragrant, add in chicken mince meat, fry well.
2. Add in Bunga Raya Ku’s (Suriku) Chilli Powder and Bunga Raya Ku’s (Kampungku) Chicken & Meat Curry Powder, stir well.
3. Lastly add in big red onion and seasoning, stir well to become filling.
4. To prepare wanton flower cup : Rub some butter on the 12 pcs cupcake mould, press wanton wrappers into mould to make a flower shape.
5. Bake into oven 130℃ with top and bottom heat for 9 minutes or till golden brown.
6. Remove the wanton from oven, top with some apple cube, corn kernel, red capsicum cube and coriander, ready to serve.
