鸳鸯三鲜金汤泡饭 Seafood Soup Rice

材料
Jasmine Sunwhite
新阳上等香米200克、
甜豆30克、萝卜20克、
苏东50克、虾球3只、
鱼片50克

调味料
金汤300克(用红萝卜汁+
高汤煮滚)、蚝油½汤匙、
生抽½汤匙、花雕酒适量、
盐½茶匙、糖½茶匙、
鸡精粉适量

做法
1.将Jasmine Sunwhite新阳上等香米洗净煮熟备用。
2. 然后取出50克的Jasmine Sunwhite新阳上等香米饭炸至脆米备用。
3. 接着在镬里加入适量的油,爆香蚝油和花雕酒爆香并且加入金汤。
4. 接下来就可以加入Jasmine Sunwhite新阳上等香米、虾球、鱼片和其余调味料并且煮至熟滚。
5. 加入甜豆、萝卜花、苏东并且煮至熟,再勾上适量的欠粉。
6. 最后撒上事前炸好的脆米即可享用。

Ingredients
200g Jasmine Suwhite Rice (washed), 30g snow pea,
20g carrot (flower slice), 50g squid (flower cut), 3 prawns, 50 fish fillet

Seasoning
300g stock, ½ tbsp oyster sauce, ½ tbsp soy sauce,
some Chinese Hua Diao wine, ½ tsp salt, ½ tsp sugar,
dash of chicken granule stock

Method
1. Wash and cook Jasmine Sunwhite rice, set aside.
2.Heat some oil in wok, deep fry 50g Jasmine Sunwhite Rice in hot oil
till crispy, drain and set aside.
3. Heat some oil in claypot, sauté oyster sauce and Chinese wine till fragrant, pour in stock.
4.Add in prawns and fish fillet, stir well. Add in cooked Jasmine Sunwhite
rice, bring to a boil.
5. Add in carrot,snow peas and all seasoning. Lastly add in squid, thicken with some corn starch, mix well.
6. Spread some crispy rice on top before serve.
