黄金脆皮鸭Golden Crispy Duck

材料 鸭肉1公斤、薄饼皮

腌料 南乳1汤匙、五香粉1汤匙、盐1茶匙、
胡椒粉1汤匙、姜5片、青葱2棵

脆皮水 麦芽糖1匙、白醋½匙、水3匙

装饰 去皮黄瓜与青葱

做法
1.白醋加水煮开烫鸭12 秒。
2.抹干鸭子,放入冰箱1小时,收干水。
3.取一小碗,混合所有腌料。
4.鸭子涂上腌料,腌制6个小时,收在冰箱收干水份。
5.把姜片和青葱塞入鸭腔内,以铝箔纸包着。
6.取出鸭子,涂上脆皮水,放入Midea气炸锅,以170℃先烤35分钟,之后转200℃烤20分钟。
7.取出鸭子,待冷20 分钟。切黄瓜、葱白丝、蒸饼皮。
8.鸭子切片,摆盘。

 

Ingredients
1 kg duck meat, Some popiah wrapper

Marinated ingredients
1 tbsp fermented soya bean curd,
1 tbps five spices powder, 1 tsp salt,
1 tbsp pepper, 5 slices ginger,
2 stalks spring onion

Sweet Sauce
1 tbsp maltose, ½ tbsp white vinegar,
3 tbsp water

Garnishing
Some strips cucumber and spring onion

Method
1. Add some vinegar into boiling water and blanch the duck for 12 second.
2. Remove the duck and pat dry with kitchen paper.Keep into fridge for 1 hours.
3. In a small bowl, combine all the marinated ingredients and mix well.
4. Sprinkle the mixture into the cavity of the duck and rub evenly over the entire outside of the bird, cover and refrigerate the bird for at least 6 hours.
5. Tuck the ginger and spring onion inside the cavity of the duck. Cover with aluminium foil paper.
6. Rub duck outside with sauce. Place duck breast side down in a Midea Air Fryer roasting rack and close the air fryer drawer and set the temperature for 170℃ and timer for 35 minutes. After that turn to 200℃ and timer for 20 minutes.
7. Transfer duck to a cutting board and let stand 20 minutes before cut. Cut cucumber into small strips. Cut the leek onion in half, take the green part out and cut the remaining white part. Steam popiah wrapper for 5 minutes.
8. Slice the duck meat one by one. Take one wrapper brush around 1 teaspoon of sweet sauce on the bottom, lay a small shredded leek onion and a small strip of cucumber. Then place two slices of duck breast meat, roll up and enjoy.
